Healthy Vibes Healthy Apple Pie Oats

Mmmm crisp fall mornings call for crisp apples on my apple pie inspired oatmeal 🍎 Whether its actually fall or not, it always is in my mind so I’m going with it 🤷🏽‍♀️ no questions, please 😌 

 

Why the sudden post about oats you may ask? My friend once told me that if I ate more oats, I wouldn’t have a “pancake booty”. Excuse me 🤔 Long story short, here I am, sans “pancake booty” 🙃Cooked the oats and layered some cooked spiced apples in between them. Drizzled with almond butta & Topped with our mixed feelings granola because I’m festive & extra AF. HEALTHY VIBES APPLE PIE OATS:

 

Ingredients:

 

1/2 cup old fashioned oats 

1/2 peeled & cut apple 

1/2 cup liquid (I used water) 

1/4 cup water 

1 tablespoon of almond butter 

2 teaspoons of cinnamon 

1 tablespoon coconut sugar 

2 tablespoons of healthy vibes mixed feelings granola 

 

Directions: 

 

1. In a small pot add apple, cinnamon, coconut sugar and 1/4 cup of water to a boil and cook for approximately 3-4 minutes.

2. Once the apples have cooked down, combine two pieces of the apple mixture to 1/2 cup of oats and 1/2 cup of liquid and cook for an additional 3-4 minutes. 

3. Once oatmeal has cooked to your liking, remove from heat and layer apples with oatmeal into a bowl. 

4. Top with the remaining cooked apples and top with our mixed feelings granola and a drizzle of almond butter. 

5. Swoon.
