15 Minute Quick Lentil Daal! (Gluten Free + Vegan)

15 minute dinner?! This is NOT a drill! 

Am I the only person in America who cannot be bothered (most times a week) to spend more than 30 minutes a night on cooking dinner? I mean people have things to do! Laundry, washing, shopping, Netflix, shopping, Netflix, and more Netflix! Jeesh! It is absurd that people think we have hours on end just laying around a day to bake and cook! *Inserts Quick 15 minute daal.* 

Now my friends...this is a game changer. I always strongly encourage you all to do more home cooking as it is healthier, you can control the flavors and sodium, and most importantly, you know what is in your food....that is very important, especially these days, ya know...during a pandemic? 

I present to you my quick 15 minute daal! A clean, easy recipe which packs loads of nutrients into each bite and includes a quick hack! Did I mention it's also cheap to make? Now, this is a friendly reminder that this is my easy take on Daal, if you don't agree...fight me! Just kidding, no fighting...let's get cooking!

 

SERVINGS: 6 People
COLLECT:
Ingredients:
1 can cooked lentils
1 6oz can tomato paste
1 14oz can coconut milk 
1 green chilé
5 garlic cloves (minced)
2 tablespoons cilantro (chopped)
2 tablespoons ginger root (minced)
1 red onion (diced)
2 tablespoons oil
2 tablespoons lemon or lime juice
1.5 tablespoons garam masala powder
2 teaspoons turmeric
2 teaspoons salt
Execute:
1. Sauté diced red onion with all spices, juice, garlic and green chilé in the oil until translucent and fragrant.
2. Add can of tomato paste and cook down for two minutes.
3. Add coconut milk and chopped cilantro and allow to simmer for about ten minutes.
4. Add can of lentils and allow to simmer for another 5 minutes.
5. Serve hot with brown rice, quinoa or alone!
